Mushroom & Cabbage Casserole
Cheesy Mushroom & Cabbage Casserole Recipe – easy & healthy low
carb vegetarian dinner ideas – perfect for your Meat Free Monday with
vegetables and a cheesy sauce.
Ingredients
- Cabbage, chopped
- Mushrooms, chopped
- 2 Eggs
- 100g/3.5 ounces Feta
- 1 Cup Grated Cheese
- Butter or Coconut Oil, for cooking
- Salt & Pepper, to taste
Instructions
- Preheat the oven to 180C/350F and get out a baking dish.
- In a frying pan, melt butter and then add the chopped cabbage, mushrooms, salt and pepper, to taste.
- Cook until the vegetables have softened.
- Whisk together the eggs, feta and half of the grated cheese.
- Once the vegetables have softened, move them to the prepared baking dish.
- Mix through the egg and cheese sauce until well combined.
- Top with the other half of the cheese, or more to cover.
- Place into the preheated oven for 25 to 30 minutes, or until the cheese is golden and crispy to your liking.
