GOOEY BROWNIE PIE

Valentine’s Day is coming up, so today we are here with a decadent and over the top brownie recipe you can share with your Valentine. And not just regular brownies either. This is a gooey brownie pie, that will make you rethink brownies forever.

Those of you who have been reading this blog for a while know that I can get a bit long winded. Sometimes more than “a bit”. Yeah, well. We are who we are, people.

If you’re used to my long ramblings, the brevity of this post might come as a surprise. But, you know, here’s the thing… It really should only take two words to convince you that you need this recipe in your life.

I can’t remember where I saw this recipe first, but as soon as I saw the picture, I knew I had to make it. Maybe it was shared on Facebook, I don’t remember. But one thing I know, is Ina Garten knows how to bake. Her Outrageous Brownies are amazing, so I knew this gooey brownie pie would be too.

Her recipe called for a chocolate ganache (melted chocolate chips with heavy cream) drizzled over the top. But I wanted to make it a little extra special. So I made Peanut Butter Hot Fudge Sauce from A Dash of Sanity to spread over the top. You could follow the original recipe, use my special touch, or even just use your favorite hot fudge over the top. Whatever form of extra chocolate you add will be delicious.

Also, it’s really super easy. Maybe not as easy as tearing open a box of brownie mix, but close. And SO worth it. Whipping up a homemade Brownie Pie is even easier if you use a refrigerated pie crust. If you do use a refrigerated crust your brownie pie will not have a chocolate crust, of course. But, it’s a perfectly acceptable decision. Your pie will still be magnificent.
Having said that, I do want to point out that the from scratch pie crust used in this brownie pie recipe is simply my standard, tried-and-true Fool Proof pie crust with more sugar and some cocoa powder. It’s called “fool proof” for a reason. You’d have to put some serious effort into messing it up.

Ingredients
for the brownie
  • 2 eggs
  • 3/4 cup organic coconut sugar
  • 2 tsp pure vanilla extract
  • 1/2 cup + 1 Tbsp organic coconut oil melted and cooled to almost room temp
  • 1/2 cup raw cacao powder or unsweetened cocoa powder
  • 1 cup blanched almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup dark chocolate chips homemade or Enjoy Life Brand
for the topping:
  • 1/3 cup dark chocolate chips homemade or Enjoy Life brand
  • 2 Tbsp full fat coconut milk from a can
  • 1/4 tsp vanilla extract
Instructions
  1. Preheat the

  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup dark chocolate chips homemade or Enjoy Life Brand
for the topping:
  • 1/3 cup dark chocolate chips homemade or Enjoy Life brand
  • 2 Tbsp full fat coconut milk from a can
  • 1/4 tsp vanilla extract

Instructions
  1. Preheat the oven to 350 degrees and grease a 9 pie dish generously with coconut oil.  Alternatively, you can make this in a square pan as traditional brownies.
  2. In a large bowl, cream together the eggs, coconut sugar, vanilla extract, and coconut oil until smooth.
  3. In a medium bowl, combine the raw cacao powder, almond flour, salt, and baking soda.
  4. Slowly add the dry ingredients to the wet and blend until smooth.
  5. Finally, stir in the chocolate chips.
  6. Pour the batter into the pie dish and use a rubber spatula to get every last drop in there!
  7. Bake in the preheated oven for about 20 minutes or until the center has just about set but is still a bit gooey. Watch closely so you don't overbake!
  8. While the brownie bakes, make the topping:
  9. In a small saucepan, combine the topping ingredients, and stir constantly while melting over low heat. Once melted and shiny, remove from heat and allow to cool.
  10. You can spread the topping over the brownie pie while it's still a bit warm, but allow it to cool completely before cutting and serving.
  11. This is one that tastes fudgier and chewier the longer you wait! Enjoy!
