I have always loved crispy breaded chicken tenders. Even as a child it would be the first thing my eyes spotted on the menu. Now, even as an adult, I still love them. Things are just a little different these days as I make my own keto chicken strips at home.

For many of you, your first instinct may be to walk away when you see pork rinds listed as an ingredient. Trust me when I tell you that you cannot taste them at all. I have never really been a fan of pork rinds, but when used as a low carb breading option, you would never even know they are there. Combining the pork rinds with the Parmesan cheese and the seasoning makes a perfectly crunchy keto breading mix that you can’t tell apart from its gluten-filled, floury counterpart. These keto buffalo chicken tenders are the real deal!

We’ve tried this low carb breading every which way and we usually opt for baking. We do this for a couple reasons. Cleanup is way easier and it’s easier to track nutrition on baked keto chicken tenders. If you go for the fried chicken it can be a bit of a guessing game on the calorie count. Also, this breading bakes up to be the perfect consistency of a diner chicken tender. No need to add on a bunch of extra calories by frying them. Ingredients

  • 3-4 boneless, skinless chicken breasts
  • 2 eggs
  • 1/2 bottle Frank's Red Hot Buffalo Wing Sauce
  • 1/4 cup heavy cream
  • 12 oz sliced almonds OR pre-made almond flour OR regular breadcrumbs if you are not low-carb
  • blue cheese
  • celery
  • salt, pepper

Instructions

  1. If you are making your own almond flour, throw all sliced almonds in a blender or food processor and blend until you get a flour like texture.  
  2. If you are using pre-made almond flour or breadcrumbs, skip this step.
  3. Beat two eggs and 1/4 cream together.
  4. Slice your boneless, skinless breasts into tender like strips.
  5. Dip each tender in the egg and cream mixture, then dredge in the breadcrumbs or almond flour.
  6. Place breaded tender on a greased baking sheet or parchment lined baking sheet.
  7. Bake at 375F for 20-40 minutes, depending on oven, until chicken cooked through.
  8. Let chicken cool for 10-15 minutes after removing from oven.
  9. Toss breaded, cooked tenders in Frank's Buffalo Sauce until fully coated.
  10. Serve with celery and blue cheese or your choice of side!
