As our all-time best make ahead breakfast casserole, I always recommend this one for special occasions or when you have a big family gathering for breakfast or brunch. That’s why it’s a fabulous idea for Christmas breakfast, too. Again, though, it’s a great idea for planning ahead when you know you’ll have a busy morning or even for dinner. Who says a breakfast casserole must be served in the mornings anyway? If you’re looking for a great one, here’s how I like to make mine.

INGREDIENTS
Nutrition

  • 1 lb breakfast sausage
  • 10 eggs
  • 3 cups milk
  • 2 teaspoons dry mustard
  • 8 ounces cheddar cheese or 8 ounces colby-monterey jack cheese
  • 6 cups bread, cubed
  • salt and pepper

DIRECTIONS

  1. Preheat oven to 325 degrees.
  2. Cook the breakfast sausage as directed on the package. Crumble and drain.
  3. In a large bowl combine the eggs, milk, dry mustard, pepper, and salt. Mix thoroughly.
  4. Lay half the bread cubes in the bottom of a greased 9 x 13 casserole dish.
  5. Add half the cheese and sausage to the casserole dish along with half of any of the optional ingredients if desired.
  6. Repeat layer of bread, cheese, sausage, and optional ingredients if used.
  7. Pour egg mixture over the top of the casserole.
  8. Bake for about an hour or until eggs are set. Cover with foil if top browns too quickly.
