Pineapple Dream Dessert

Summer is officially in full swing at my house. Kids got out of school last Thursday and I lost all of my hair by Saturday. I kid. I kid. Sorta. This is the time of year that working from home has some serious downfalls. On one hand, you want to be Super Mom and plan all these super cool, fun things for your kids so this will be the summer to remember. On the other hand, you HAVE to get work done. But when you don’t go into an actual office, how do you do that? How do you be a fun Mom, still teach your kids through the summer and make sure they are actually practicing basic hygiene and eating decent food, keep the house straight, get all the chores done (grocery shopping, cooking, etc.) and still keep your sanity, manage a shower and earn a paycheck? I just can’t figure out that balance yet without losing my mind.

This pineapple dream dessert is one of my family’s favorites. You know those desserts that seem to be at all the family gatherings? Those recipes that your grandma has been making for years? Like Pineapple Upside Down Cake or Ambrosia and Watergate Salad. This is one of those desserts.

And my dishwasher broke yesterday and it’s going to be two weeks before the warranty repair work can be done on it. Summer just started, y’all. I know – first world problems, right? But seriously, if you have any tips on how I can keep it together without totally falling apart mentally – I’d love to hear your tips. Because something has to give at some point, doesn’t it? We can’t possibly be all things to all people at all times and yet we don’t want to alienate all those folks that we love and are more important to us than work and a clean house.
This light and fluffy pineapple cream cheese dessert can be easily transported, hence it appearing at all those family functions, and rarely has leftovers.
I’ve had similar reactions to this Chocolate Lasagna recipe, everyone seems to love it. So the only thing you’ll take home is a dish that needs washing!

INGREDIENTS
  •     1/2 cup mini chocolate chips
  •     16 ounces vanilla flavored candy coating ( Almond Bark or CandiQuik)
  •     1 (15 ounce) jar creamy peanut butter
  •     2 cups Rice Krispies cereal
  •     1 1/2 cups mini marshmallows
INSTRUCTIONS
    Prepare 2 cookie sheets with a silpat mat or parchment paper. Set aside.
    Place chocolate chips in the freezer, until ready to use.
    Melt Almond Bark in a heat safe bowl, microwave at half power for 30 seconds at a time until melted and smooth.
    Meanwhile: Add rice krispies to a large bowl. Set aside.
    Add peanut butter to Almond Bark. Stir to combine.
    Pour vanilla candy mixture over rice krispies. Stir until combined. Allow mixture to cool to room temperature (or until barely warm).
    Add marshmallows. Mix until combined. Add frozen chocolate chips. Stir to combine.
    Use a 2 tablespoon scoop to portion treats onto prepared cookie sheet.
    Allow to set in a cool place, until firm. You can pop them in the fridge if your kitchen is too warm.
    Serve and enjoy!
