Pineapple Delight

This Pineapple Delight dessert has a graham cracker bottom topped with a creamy, dreamy pineapple filling.
Pineapple Delight


Ingredients
  • 2 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1 (20-ounce) can crushed pineapple, drained well
  • 1 (8-ounce) container whipped topping, or 2 to 3 cups homemade whipped cream

Instructions
  1. Grease an 8x8-inch pan and preheat oven to 325 degrees.
  2. Combine graham cracker crumbs and melted butter in a medium bowl. Stir well.
  3. Transfer to prepared pan and press down on crumbs to compact them well.
  4. Bake for 10 minutes. Let cool completely.
  5. Use an electric mixer to mix softened butter, eggs, vanilla extract until smooth. Gradually beat in powdered sugar. Spread mixture on top of graham cracker crust. 
  6. Bake 15 minutes. Let cool.
  7. Stir together whipped topping and drained crushed pineapple. Spread on top of filling. Cover and refrigerate until ready to serve.
